Ingredients
  • 2 medium tomatoes
  • 2 jalapeno peppers
  • 1 medium white onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 lime
  • oregano
  • chili powder
  • cumin
  • salt
  • pepper

Instructions:
  • Pre-heat broiler on high
  • Quarter the tomatoes
  • Halve the jalapenos
  • Cut the onion into 8 wedges
  • Half the red bell pepper and remove seeds
  • Lay on baking sheet, drizzle with olive oil
  • Sprinkle with oregano, chili powder, cumin, salt, pepper
  • Broil for 5-10 minutes, until just starting to char
  • Put the roasted vegetables into a blender with the juice of 1 lime
  • Blend, season with salt/pepper
  • Mix with shredded chicken / put ontop of tacos
