Ingredients
- 4 chicken thighs w/ skin
- 2 tsp salt for chicken
- 1 tsp pepper for chicken
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 onion, diced
- 1/2 sun dried tomatoes, chopped
- 2 cups spinach
- 2 cups heavy cream
- 1 tsp salt
- 1 tsp pepper
- 1/2 cup parmesan cheese
- Pasta ( fettucini / angel hair )
Instructions:
- Heat stainless steel pan over medium-low heat w/ oil (5)
- Pat chicken dry with paper towel, season with salt + pepper
- Cook chicken skin side for ~13 minutes, until crispy and colored
- Flip chicken, cook for another 15 or until 165F, then remove from pan
- Cook pasta following package instructions and set aside and drain
- Add garlic and onion and cook until translucent
- Stir in sun dried tomatoes and spinach, cook until wilted
- Add heavy cream, salt, pepper and bring to a boil
- Mix in parmesan cheese and stir until sauce thickens
- Mix pasta into sauce and plate sauce + pasta, put chicken thighs on top
