Ingredients
- 3/4 cup butter, softened
- 3/4 cup white sugar
- 3/4 cup light brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/4 cup all-purpose flour
- 1 tsp baking soda
- 3/4 tsp cinnamon
- 1/2 tsp salt
- 2 3/4 cups rolled oats
- 3/4 to 1 cup raisins (less or more raisin-y)
- 1 cup heavy cream + 1 tbsp sugar (to taste)
Instructions:
- Preheat oven to 375F
- In a large bowl, cream the butter and sugars until smoothing
- Beat in the eggs and vanilla until fluffy
- In another bowl, mix together cinnamon, salt, flour, and baking soda
- Gradually beat into the butter mixture
- Mix in oats and raisins
- In another small bowl, whip the cream until it takes on a whip-cream texture, mix ~1tbsp sugar in until its just slightly sweet
- Fold the whip cream into the batter
- Use parchment paper to line a baking sheet
- Small tbsp size dollops - do a test batch to find the right size for you.
- Cook 8-15 minutes (depends on oven)
